I like a bit of baking but finding the time to do it lately is the hard part. Once I get started though, especially with a recipe I’m familiar with, it doesn’t take long at all. It’s cleaning up afterwards that really wrecks my head!
One of my fav recipes is my Banana & Almond muffins (but sometimes I replace the almonds with white chocolate) depending on mine or my boyfriends sugar cravings! Or for some of you it would depend on the children in the house!
Overall, these muffins are a healthy option though as I add honey rather than sugar to sweeten.
Preheat the oven 180 degrees. This recipe bakes 12 medium sized muffins.
Ingredients :
125g Plain Flour
175g Wholemeal Flour
175g Almonds
400g Bananas (peeled & mashed)
2 Eggs
175g Honey
2tsp Baking Powder
1/2 tsp Salt
75ml Sunflower Oil
Method:
So basically you mix the dry ingredients in one bowl and the wet ingredients in another.
Then add the wet mixture to the dry and scoop into cases.
Cook for 25 mins and allow to cool.
Simple as that! So if you have a craving for something sweet, then these are a healthier option & with a nice cup of tea, I know you’ll be satisfied.
